I am Juan Carlos, a Oaxacan, coordinator of a social project called Etnofood, a "Food Lab" in Oaxaca that seeks to promote the dissemination of food heritage. Together with the Team, we work on a community project of social tourism. In this project you will meet Renato, Mary, Martín, Lupita, Uriel, José and Abigail, all specialists and highly trained in the culture of Oaxaca promoting the Slow Food culture.
