Ding Bian Hu 鼎边糊 (Rice Flour Cake Soup) is a famous Foochow snack, which is immediately cooked while rinsing rice flour paste down the edge of pot. Rice flour paste is rinsed quickly round the pot edge. Pot is then covered for a few seconds and the rice flour paste is instantly cooked becoming pieces of rice flour cake. It is then boiled in soup together with handmade fish ball, mushroom, squid, black fungus, onion and other ingredients to produce an auspicious flavored food.
