We’ll have a welcome drink on arrival, then we’ll put on our aprons, roll up our sleeves and get straight into the pasta- making. While the pasta rests, I’ll show you how to make a homemade ricotta type cheese for the ravioli filling. Afterwards, we’ll move on to the pesto, walnut and mushroom sauces, these are the sauces for the 3 Ligurian speciality dishes.
-“ Mandilli di Sea” ( “ Silk Handkerchiefs”) -Lasagna type pasta with Pesto sauce.
- “Pansotti alla Salsa di Noci “ - Ravioli with ricotta and spinach in a walnut sauce.
-“ Taglierini ai Funghi” - Fine- cut tagliatelle in a tomato and wild mushroom sauce.
The next next stage involves the “tirare la sfoglia” - (the rolling out of the pasta), the cutting, the filling and the shaping. You’ll learn 5 or 6 different pasta shapes.
After we’ve prepared our trays of freshly made pasta, we’ll cook and eat the pasta dishes with a glass of wine around the the table and then to finish off, there’ll be a surprise sweet and a traditional italian moka coffee.

I was born in Liguria, Italy, but brought up in England in a family of Italian restauranteurs and caterers. This background nurtured my passion for cooking and at the age of 13, I was a regional winner and finalist of “The Young Cook of the Year Competition” held at the Savoy Hotel, London, where I served up “Pasta alla Salsa di Noci” ( Pasta in a Walnut sauce). My pasta-making experience grew over the years as I was involved in the start-up of “Pasta Italiana”, my parents’ home-run pasta- making business, (lasting for 20 years), where I learnt to make fresh pasta and sauces based on traditional recipes handed-down from my grandmother who lived in Liguria. Now I live in Como, run and teach my own English courses and I am an Airbnb Superhost and I would love to share my pasta-making passion with anyone who adores pasta like me.

We will conduct the pasta workshop in my “Lab” - a basement workshop space, which will be set up with large tables to provide ample working space, pasta machines, tools, equipment and a seating area where you’ll be able to taste your delicious pasta creations.

We had a really lovely morning/early afternoon learning to make pasta with Anna in her pasta lab. Anna was a great host and teacher, we are excited to make the recipes at home now that we have learned from her! Would recommend to anyone staying in the Como area.

Ich wollte schon immer die Kunst des Pasta-machen’s lernen. Ich dachte mir - Wo wenn nicht in Italien. Anna hat uns netterweise am Bahnhof abgeholt und wir sind zu ihrem „Pastalab“, ein paar hundert Meter entfernt, gegangen. Mit ihrer sehr lockeren und netten Art hat sie uns direkt die Nervosität genommen und dafür gesorgt, dass wir uns sehr wohl gefühlt haben. Im Pastalab angekommen waren wir begeistert wie sorgfältig und strukturiert sie alles geplant hat. Wir haben beigebracht bekommen, wie man 6 verschiedene Pastasorten zubereitet und durften, das war uns sehr wichtig, alle selber die Pasta zubereiten. Wir haben gelernt worauf man achten muss um perfekte Pasta zuzubereiten. Gegen Ende haben wir dann unsere selbst gemachten Pasta in 3 traditionellen Pasta-Gerichten verköstigt - eins war leckerer als das andere!! Wir haben zudem beigebracht bekommen, wie leicht es ist Ricotta selber zu machen und haben alle Rezepte zum nachkochen behalten dürfen. Ich kann jedem nur empfehlen einen Kurs bei Anna zu besuchen wenn man lernen möchte, wie man echt italienische frische Pasta zubereitet.

It was just awesome! Anna is very nice and knows how to make great italien pasta. The best was the feeling after you put the pasta dough through the pasta machine and get your first self made pasta (and of course the tasting and eating ;)) Thank you for the experience.

My family and I booked the pasta lab with Anna while we were on vacation in Como, and it was one of the best things we did on our trip! Anna was extraordinarily helpful before the class even started; she helped us find the correct bus to her apartment in Erba and met us at the train station. She told us all about her family history in Italy and her grandmother's tips for making fresh pasta. We had so much fun learning the authentic Italian recipes and chatting with Anna that the morning flew by. We were amazed at how much pasta we made, and how DELICIOUS it was by the end. Also, we thought we would only get to try samples of the noodles we made... it was a full meal, and we left feeling VERY HAPPY and VERY FULL! Thank you Anna for such a lovely time! (Although I dare say you've made us into total pasta snobs... we'll definitely be making our own pesto from now on! And we've already ordered a pasta maker for our home kitchen!!) :D

A perfect expirience for a rainy day. The Pasta making was easy to learn and the food was delicious. Anna was also a great host. Would defenitly recomend.

Wir hatten eine wundervolle Zeit beim Nudelmachen! Anna ist wundervoll, die Pasta ist richtig lecker geworden und wir haben viel gelernt. Hat sich auf jeden Fall gelohnt! Wir freuen uns schon, die Rezepte Zuhause nachzukochen.
