Class will begin at 10:00 am. After introductions and offer of coffee, water, & tea we show everyone where the restrooms are! I start with an explanation and overview of how cheese is made. I then explain the types of cheeses that we will be making that particular day, and give them an overview of how that will be done. I explain that due to time restraints, we are going to be making "fresh" cheeses, rather than aged cheeses. I pass out a supply list for home cheese making, and the recipes of each cheese we will be preparing. (These handouts are for the students to take home.) Then we begin making the cheeses from our very fresh goat milk. It is very hands on. I have people stirring milk, adding the various additives, checking the temperature, and cutting and stirring the curds. After the cheeses are finished, we are able to sample them with crackers and sometimes with other items such as figs from our garden, or tomatoes and basil. I then portion out generous samples of the cheese in containers and give them to the students to take home. NOTE: We milk our goats at 9:00am. If you are able to visit us and or stay over night in our lodge, you are welcome to watch and try the milking.

I own the Mountain Goat Lodge B&B and Dairy Goat Farm. I have been making cheese for 10 years. For the past 8 years I have taught cheese making classes once a week. I make cheese and yogurt daily. I sell my products at a local farm stand as part of a CSA. I worked for a major Dairy and learned the importance of sanitary milk handling. I owned a Goat Sanctuary in WA for five years. Our herd of Swiss Dairy Goats exemplify how beautiful, healthy and friendly goats can be. Their milk is creamy fresh and delicious, it contains a lot of butterfat which makes for delicious creamy cheeses and yogurt

We will be in the dining room and kitchen area. If guests are interested they will have the opportunity to interact with all of our pet dairy goats. Guests are also welcome to hike on our 45 minute walking trail after class is finished.
