Cosa farete

Brian and Holly are Gilbert's Cheese Experience. We host cheese-pairing pop-ups that combine locally procured food and beverages with insider access to craft producers. This is an exciting new type of event: a "cheesemonger's dinner," featuring a chef-created tasting menu with cheese in every course! We're teaming up with the Atrium Kitchen at Pike Place Market to bring you an international evening of food and spirits from the heart of Seattle's food culture. Chef Traci is preparing a Mexican feast, and Casa Noble tequila will be there supplying beverages. First, we'll tell you about our mission and philosophy, and explain the importance of getting connected to your local food and beverage ecosystem. We'll teach you how cheese is made, and dive into our first course: Latin-influenced artisan cheeses paired with three different tequila selections. Then Chef Traci will serve cheese enchiladas, quesadillas and cheese-topped Mexican corn, and Casa Noble will offer tequila cocktails. Finally, we'll have a group chat about what we tasted. You'll leave satiated, satisfied and having learned a few things, too!

Brian & Holly

Brian Gilbert is the owner of Gilbert's Cheese Experience; he's a 20-year veteran of the food and beverage industry with a lifetime of passion behind him. He is a Certified Cheese Professional (CCP) and Certified Cheese Sensory Evaluator (CCSP), and is also Head Cheesemonger at Beecher’s in Seattle's Pike Place Market. Brian has spent nearly a decade making, aging, selling and procuring cheese while educating the community. Holly Regan is the creative lead and head of marketing, PR and outreach at Gilbert's Cheese Experience. She is a professional writer and editor with culinary expertise, and is deeply involved with the local food and beverage community. A Seattle native with a background in anthropology, she is passionate about how food and drinks bring people together in communities all over the world. She blogs at praiseseitan.com.
